Dr. Isabelle Lesschaeve, Ag. Eng., PhD

Dr. Lesschaeve is an agriculture engineer, trained in food science. She earned a PhD specialized in sensory evaluation of foodstuffs, from the University of Burgundy, France. For the last 20 years, Isabelle has worked in both public and private research environments, developing and applying her sensory expertise to new product developments and innovative methodologies predicting consumer preference.

Dr. Mantonakis’ research centres on understanding psychological factors that affect consumer memory: whether that is a nostalgic experience, or a recent experience. Her investigations, which use experiments, are attempts to understand the phenomenological aspects of remembering that are involved in both veridical and illusory memories.
